Whether you’re swimming the days away or running around to all those barbeques, summertime can be exhausting, so you deserve a treat! Each of these recipes is easy and quick to make so you can stay on the move (or keep relaxing). From parties to hiking, we’ve got your summertime dessert fix!
This is the perfect dessert for picnic season; they’re surprisingly quick to make and are a chocolate lover’s dream! For some extra tips (and a good laugh), check out our video below to watch us make these tasty treats!
Directions: Combine the peanut butter, confectioners’ sugar, graham cracker crumbs, butter, brown sugar, and vanilla in a large bowl and mix well. Press into 10×15 – inch baking pan. Melt the chocolate chips and shortening in a small saucepan. Spread over the peanut butter layer to cover. Chill in the refrigerator until firm. Cut into squares. Makes 4 dozen.
Individual Fruit Pizzas
Hosting a party? Try serving an individual crust, spread with creamy icing, and give your guests a platter of fruit. They will love building their own fruit pizza. Check out the delicious recipe below:
Directions: Follow the directions from your sugar cookie mix to prepare your favorite sugar cookies. Make sure you form them into circles. While your cookies are baking, work on the topping. Using a mixer, with a whisk attachment, whip the marshmallow crème and cream cheese until light. Serve the cooled crusts, topping, and fruit platter and let the pizza party commence! Makes 6-8 servings.
Oat and Fruit Bars
This is Tami’s very own recipe, which demonstrates how eating healthy can also be delicious. These bars are great for all those outdoor activities, like hiking or camping. This recipe can be modified in a variety of ways – even for gluten free! Try experimenting with different dried fruits and find the perfect bar for you!
Directions: Preheat oven to 350 degrees. Mix syrup, eggs, fruit sauce, peanut butter, dried fruits, and nuts. Add in the flour, wheat germ and rolled oats. Mix well. Spray your 9×13 baking dish with non-stick cooking spray. Press mixture evenly down into the pan and bake for about 25 minutes, or until a toothpick comes out clean.
Directions: Prepare the outdoor barbecue to medium-high heat. If this isn’t an option, you can also use an indoor grill pan set to medium-high heat. Lightly oil the grill. Grill the pineapple slices until heated through and beginning to brown- about 3 minutes per side. Make sure to leave the pineapples on the grill, untouched, so that you can create the grill marks.
While the pineapples are cooking, whisk the mascarpone and vanilla in a small bowl to blend. Set aside.
Combine the chocolate-hazelnut spread and cream in a small bowl and stir to combine. Place in a microwave on high for about 2 minutes, stirring every 20 seconds to blend well. If you prefer, you can also combine the chocolate-hazelnut spread and cream in a small saucepan, set over low heat, and cook for about 5 minutes, stirring constantly. Heat until silky smooth and easy to pour, about 3-5 minutes.
Transfer the pineapple slices to a large platter. Drizzle the warm chocolate-hazelnut sauce over the pineapples. Dollop the mascarpone mixture atop. Sprinkle with hazelnuts. Makes 10-12 servings.
