It’s that time of year! With block parties, cook outs and bonfires everywhere you go, here are some twists on your summer favorites.
Combine the spinach leaves, strawberries, blueberries, and mandarin oranges in a salad bowl and toss to mix. Mix the poppy seed dressing, lemon juice and sugar in a bowl or place in a shaker and shake to mix well. Drizzle the dressing over the salad and toss to coat. You can also use blackberries or sliced kiwifruit as substitutions for, or in addition to, the fruits used above.
First prepare the Caesar dressing: Process the anchovies, egg, garlic, Parmesan cheese, lemon juice, salt and pepper in a blender or food processor until blended. Add the olive oil in a fine stream, processing constantly until blended. Next tear the romaine into bite-sized pieces and place in a salad bowl. Add the dressing and toss to coat. Now you’re ready for the burgers. After preparing your favorite patty, you can assemble the burger: Place each patty on the bottom of a toasted hamburger bun. Layer 1 or 2 tomato slices, a mound of Caesar salad and shredded Parmesan cheese on each patty. Serves four.
